Classic Cheese Scones

Cheese Scones have always been a staple at tearooms across the country, and at the Winter Cafe we’re no different however we do our Cheese Scones at-little uniquely and they are sure to impress. Ingredients:

2 lbs. Self Raising Flour 

1 Table Spoon Baking Powder

Pinch of Salt

8 oz. Butter

4 Eggs 

Table Spoon Whole Grain Mustard 

8 oz. Red Leicester 

Full Fat Milk to Bind 

This Recipe makes around 16 scones.


Step 1: Start with your Dry Ingredients

Together in a mixing bowl add all of your dry ingredients Flour, Baking Powder, Salt and gently combine.

Step 2: It’s all Coming Together

Once your dry ingredients are combined, add in your Butter. For better distribution cut your butter into cubes and add straight into the mixer. Next, add in a generous spoonful of Whole Grain Mustard this is what gives our scones their extra flare.

Step 3: Getting Cheesy

Next grate the Red Leicester Cheese. You could use Cheddar here if you prefer, but Red Leicester is what gives our scones their amazing colour. Add the grated cheese into the mixing bowl and it will slowly combine.

Step 4: Add Eggs Slowly

Next, slowly add in the 4 Eggs. Do this one at a time to ensure the eggs is fully incorporated. Once the eggs are all added, use some Milk as needed to help bind the mixture to a malleable consistency that you’re able to cut into shape.

Step 5: A Cut Above the Rest

Flour your surface then tip your scones mixture on to it, further combine the mixture using your hands so you have a block with a depth of about 1.5 inches and using an also a 1.5-inch serrated cutter, cut out the scones and place on a baking sheet covered tray. You should have enough mixture to make around 16 scones. Once placed on the tray using a spoon or by hand put a small amount of milk on the top of each scone inorder to give the scones the perfect crust and shine.

Place in the oven at 180c for 15-20 minutes until golden brown and then ENJOY!
